Corn Hub

This is a little fun Mezcal old fashioned from Resa Mueller via PUNCH.

It calls for infusing some mezcal with Corn Pops cereal. The cereal tames the mezcal a bit with toasty corn sweetness, the Mellow Corn brings that kettle corn flavor, and the bitters work to tie everything together.

First, you need to make some Corn Pops infused mezcal. I took 100ml of Del Maguey Vida and added 7g of Corn Pops, and let it sit overnight then strained out the cereal.

Corn Hub
1oz Corn Pop Mezcal
1oz Mellow Corn whiskey
1 bar spoon rich Demerara syrup
3 dashes Bittermens Xocolatl Mole bitters

Stir with ice and strain into an old fashioned glass over a large cube - garnish with an orange twist.
